OK so the other day i was feeling experimental and seeing as we are posting this week on Flax i thought i would come up with something a little different to try in the kitchen! And wouldn’t you know it, it turned out a treat that even the un health conscientious people i know enjoyed
What you’ll need
- 500 grams chicken breast, minced
- 1 -2 grated carrots
- 1-2 grated zucchinis
- cayenne pepper
- 1 egg
- some flaxmeal
- 1kg tomatoes
- 3 large capsicums
- onion
- garlic
- 1/2 cup Vinegar
- 1/4 cup equal or stevia or any other sugar substitute
- cayenne pepper
- basil (fresh or dried)
How to
Mince the chicken breast using a food processor, dont get chicken mince from your butcher or supermarket cause that stuff is full of fat! You could also use turkey or veal if you were feeling adventurous but chicken breast is awesome.
Once you have minced the chicken, grate the carrot and zucchini and mix it all together in a bowl and add the egg and cayenne pepper. You can season it if you like, but just remember that salt isnt good for you and we already have pepper in there!!
Once the ingredient are combined roll into meat balls about 50 grams each. Sprinkle some of your flaxmeal onto a plate and “crumb” the meatballs in the flaxmeal. Set aside in the fridge while your sauce is cooking.
Place the tomatoes and the capsicums (centres and seeds removed) in the oven for about 1/2 an hour until slightly roasted. In a pan fry the onion and garlic and cayenne pepper, then transfer the roasted tomatoes and capsicums into the pan with a dash of water and bring to the boil to soften. Add the vinegar and stevia and continue to bubble until the vegetables are squishy. Puree into a sauce with a stick blender, add the herbs and let reduce into a nice thick sauce. The longer you let reduce the more the falvours will develop. Have a little taste to make sure the sour/sweet levels are to your liking.
In a pan heat some olive oil and fry the chicken meat balls on each side until brown and cooked through.
Place on a bed of zucchini pasta and pour some sauce over….
